Bacon & Eggs Breakfast Cups

Quick and easy, but delicious breakfast treat.

 Line a muffin tin with bacon

Line a muffin tin with bacon

Line a muffin pan with Bacon (just the sides). Crack an egg right into the hole in the middle. Grate cheese over top of the egg. (I used a hard Sharp White Cheddar, but any cheese will do.) Season with Peppery Lime Gourmet salt and fresh Thyme. Then put a lid on it  (Swiss cheese on top)

Ingredients:

  • 6 Slices of Bacon
  • 6 Eggs
  • 3 Slices of Swiss Cheese
  • Wedge of Sharp White Cheddar for grating
  • 2 Teaspoons Thyme
  • 1 Teaspoon Peppery Lime Gourmet Salt
  • 4 Slices of toast cut into quarters diagonally
