Paella on the grill

Let’s talk Paella!

A favorite dish of Spain, this is a great one to make on your grill.

I used a 22” Paella pan, started by sautéing onions and garlic and then added the rice. Bomba rice is the traditional rice used, it’s a short grain rice. This was all seasoned with Garlicky Lemon sea salt.

Other ingredients include:

Quality saffron

Chicken thighs

Little neck clams

Shrimp

Lobster tails

Veggies

The key to this dish is getting the rice to crisp on the bottom of the pan, this is called the Socarrat.

Socarrat is the crust on the bottom of the rice where it was roasted against the pan.

You will want to keep a high steady heat under the pan.

Order is as follows:

Oil, onions, garlic, thighs & rice.

Once this is all close to done, add the seafood.

Have fun with it, add sausage, or other meats, switch up the veggies and seafood.
